When Robert Sisca of Bistro du Midi is talking about seafood, we listen! Robert demonstrates his technique for preparing whole grilled fish at home. He starts by stuffing a whole red snapper with citrus fruits, garlic, and herbs — a little butter doesn't hurt either! He ties the fish tightly and grills it until lightly seared on each side. He finishes the fish in the oven and then shows us how to serve it best — deboned and cut into beautiful fillets.
