I adjusted proportions of the various vegetables to suit my taste (but I did use them all). It was absolutely delicious! I was hesitant about the fennel but really like (a lot) what it l brings to the soup. The combination of flavors, all around, works very well. For the rice, I used a brown rice blend which was a little different to what Majorie used but it worked great; she was right that different rice options work fine. This recipe is definitely a keeper! Thanks Majorie and h2h! :-)
