Mindy Beltramo
Mindy is the librarian at Peter Woodbury School in Bedford, New Hampshire where she is very active in fostering education about the environment and sustainability with children. She connects with nature herself at home by growing beautiful edible flowers and by raising alpaca and chickens. The edible flowers she grows provide Chef Gabriel Bremer of Salts restaurant with surprising and delightful ingredients like dime-size bachelor buttons which Chef Bremer says only she would grown for him with a smile. In March 2009, Mindy was awarded New Hampshire's Elementary School Environmental Educator of the Year for launching a remarkable effort to convert their school yard into a community park amongst other initiatives designed to bring children together with nature.
