You haven't had turkey salad until you've had it made with Marjorie Druker's Cranberry Mayo. Turkey leftovers are elevated to a higher level in her creations. Serve it in a sandwich, open-faced, or in endive leaves. "Sandwich" seems too common a word to apply here. Each presentation is a turkey, cranberry & pecan masterpiece!

For the cranberry sauce, I used a cranberry, ginger, apricot, currant compote I make every year and it worked great. Because I have a gluten allergy, I tried both using the endive version and a sandwich version using gluten-free millet bread, which I lightly toasted. So festive for this time of year... and a big hit taste-wise!
