Turkey Soup w/ Root Vegetables
Serves 10-12
Ingredients
- 2 tbsp olive oil
- 2 cloves fresh garlic
- 1 large Spanish onion, diced
- 1 lb fennel, diced
- 6 carrots, peeled & sliced
- 2 parsnips, peeled & sliced
- 1 turnip, peeled & diced
- 2 sweet potatoes, peeled & sliced
- 1 lb butternut squash, peeled & diced
- 14 cups poultry stock
- 2½ lbs cooked home-roasted turkey, shredded or diced
- 2½ cups cooked rice
- 3 tbsp chopped fresh parsley
- kosher salt & freshly ground black pepper to taste
How-to
- In a large heavy lined stockpot add the olive oil and place on medium-high heat
- Add all of the vegetables and garlic
- Saute this combination of vegetables for 5-7 minutes
- Pour the poultry stock over the vegetables and bring to a boil
- Turn down the heat slightly and simmer until vegetables are almost tender, 15-20 minutes
- Add the turkey meat & half of the rice and cook 2-3 minutes
- Add remainder of the rice and fresh parsley
- Season with kosher salt and freshly ground black pepper
