Seafood » Shrimp Scampi
Some believe that you should not mix seafood and cheese. We're here to tell you it works! A generous Parmesan coating forms a delicious crust for basil and oregano infused shrimp. Pop it in the oven for 5 minutes and then under the broiler for another 5, and dinner is ready.
Serves 4 as an entree; 8 as an appetizer
Ingredients
- 1 lb shrimp, deveined and shelled (keep tails on)
- 1 stick butter
- ¼ cup olive oil
- 4½ tbsp fresh parsley
- ½ cup fresh basil
- 2 tbsp fresh oregano
- 2 tbsp fresh garlic
- 2 tbsp fresh lemon juice
- ½ tsp salt
- Italian Parmesan bread crumbs
How-to
- Preheat oven to 450º
- Spread shrimp out on a cookie sheet.
- Melt butter in a small saucepan
- In a food processor, combine olive oil, parsley, basil, oregano, garlic, lemon juice and salt and pulse until mixture comes together
- Pour mixture over butter and mix well. Then pour butter mixture over shrimp
- Sprinkle bread crumbs liberally over the shrimp
- Bake for 5 minutes, then broil for 5 more minutes. Keep an eye on the shrimp to ensure it doesn't overcook

Posted Monday, February 15, 2010, at 1:04 am by Debra:Awesome! Didn't have Parmesan bread crumbs, so mixed reg crumbs with shredded Parmesan. Delicious! Next time will add some heavy cream with the angel hair/ Scampi sauce mixture. Will cook again!
