Recette NYC chef/owner Jesse Schenker takes us through purchasing, tenderizing and cooking this misunderstood octopod. After a low and slow cooking process and an overnight stay in marinade, a quick 3-4 minutes on the grill and you have a savory seafood dish to serve with a fragrant and tangy fennel salad.
