Seafood » Filleting Skate
Skate is a type of ray fish that is becoming more popular in restaurants and American kitchens. It's a beautiful white fish that is a perfect substitute for sole, cod and scrod. Of course you can always have your fishmonger fillet it for you, but why not try it yourself. For a great skate recipe, watch Mark's Skate Meunière video.
