Ingredients
- 3 eggs
- 1 tbsp olive oil
- 1-2 tbsp butter
Special Equipment
- non-stick skillet
- silicon spatula

Preheat broiler

Whisk eggs in bowl (can add fillings like cheese, mushrooms, onions, peppers, bacon but this recipe is the classic with no fillings). DON'T add milk because it will brown the omelette

Heat a non-stick skillet over medium flame

Add olive oil to the skillet

Add butter to the pan (will keep olive oil from burning)

Coat edges of skillet with oil and butter

Add eggs to heated skillet

Use a silicon spatula (can take high heat) to move edges of eggs in and swirl around, pulling edges in toward the middle

This step is the secret to this omelette's light, fluffy success! Place the pan under the broiler to cook through. Omelette should be pale in color and puffed up
