The best part about Ben Bronstein's dish is the bread on top, half crunchy, half drenched in a stew that's been simmering for hours. Even though this dish is vegetarian, it's extremely robust and filling. While not traditional, you could add large quartered mushrooms, if only for the sake of sponging up the sauce. Add them as you would meat, already browned after the tomatoes have been added.

With the vegetables providing fiber vitamins and minerals, and the ground sea salt with trace elements, and of course, the olive oil, I think recipes like this should be included for everyone who is maintaining blood pressure, as I am, by diet. Wonderful! By the way, with diet alone, I have dropped from 160 over 90 (yes, I know, yikes!) to 117 over 60, much better!
