Jeff Potter, author of Cooking for Geeks, gets creative (as always!) to make roasted peppers two ways: using a gas stove top or your - toaster? Yes! The rich and smoky taste of roasted peppers adds tons of flavor to salsas, salads, dips and sauces. Jeff is so clever!
Ingredients
- tongs (without rubber or silicone tips)
- toaster
- dish towel
How-to
Gas Stove Top Method
- Grasp pepper with metal tongs and hold over high flame on stove top
- Roast pepper 2-3 minutes, rotating to blacken all sides
- When finished roasting, wrap pepper in a towel and rub off just the outer blackened skin
Toaster Method
- Slice off top and bottom of pepper, then slice pepper open to remove core, seeds and ribs
- Cut in half, so that pepper will lay flat in the toaster
- Drop into toaster and toast for 2-3 minutes on medium
- Remove with tongs, being careful not to touch toaster coils and rub off burned outer skin
