Indian chef Madhu Gadia originally made this dish for a potluck as an accompaniment. The next thing she knew, people were dipping chips in the black eyed peas, giving her the idea to serve this flavorful dish with pita chips. Preparation is as simple as simmering canned black eyed peas with aromatic Indian spices for 10 minutes. Easy, healthy and delicious.
