Some dishes are worth using multiple pots and pans. Phyllis Kaplowitz of Bakers' Best Catering shares one of them. Classic moussaka is a rustic eggplant casserole but variations exist from Greece, Eastern Europe and the Middle East. This version has roasted eggplant, sliced potatoes, a cinnamon-flavored beef and tomato filling and a creamy mornay sauce (béchamel with the addition of cheese). The end result is well worth the clean-up.
