Posted Wednesday, March 2, 2011, at 10:36 pm by Wendy:Wow - memories of Mom's Eggplant Parm all over this one! She'd dip the eggplant into the egg wash and then into bread crumbs before frying, but otherwise, the technique was the same. Then she'd put it in a 9x15 baking dish. I loved that food!
