Do you know what spaetzle is? It's a classic German pasta that is used in dishes not like a traditional pasta with marinara sauce or pesto, but more as an accompaniment to a dish that has meat juices to sop up. Steve Brand of Upstairs on the Square has put a twist on it by adding cocoa which pairs perfectly with the seared venison.
