Gougères are savory French pastries made with a light pastry dough (pâte à choux) and creamy Gruyère cheese. Piped into little mounds that puff dramatically in the oven, gougères create a snack that can be enjoyed hot out of the oven or split and filled with cooked meat or vegetable fillings. But we don't think Thao Rich's golden-brown Gougères need any embellishment. They're perfect!

I'm not much of a baker, but her directions were easy to follow and the results were a hit. I had to buy a pastry bag for this, but it was money well spent. I also used a hand mixer (but not the regular beaters, the attachment that's more rounded, and tapered)and it totally worked. The regular beaters will get clogged...lol Trust me. Anyway, if you make them smaller you can get more like 40! This one's a keeper! Hint: Watch your oven temp, I turned mine's down to 350 after 15 minutes because they were browning too fast and my oven runs hot anyway.
