You'd be "fooled" by the simplicity of this dessert. Maria Collins will have your guests going arse-over-elbow over this classic British whipped cream treat -- beautiful and sophisticated, yet..."fool-proof" ...ok, we'll stop... She boils blueberries into syrup with a touch of sweetness and the subtle nuance of lemon verbena and mint. Some of this syrup is added into freshly whipped cream, which gives it a vibrant purple hue. To serve, layer plump, whole blueberries, a dollop of berry cream and drizzle of blueberry syrup -- and Bob's your uncle!
