Asian food is generally best with long grain rice. Jasmine rice is popular in Thai food. Basmati is popular in Indian food. Arborio rice is what you use in traditional risotto. Wild rice (even though it's technically not rice) is great with vegetable dishes. These are just a few examples. Generally any recipe you're using will call for a specific type of rice.
