    Capsaicin. What's capsaicin? It's the active component in chili peppers. It's what gives you that burning feeling in spicy foods. It's considered an irritant, yet many of us seem to enjoy eating foods containing it. The more capsaicin in a particular food, the spicier that food is going to be.
