When shopping for spices, what's a good way to gauge the quality?

    It's hard to tell which spices are going to be of higher quality just by looking at them. Generally you're not going to get much variance in a grocery store, so if you're looking for something a little more special you should try a farmer's market or a shop known for its upscale foods (sometimes cheese shops will also carry spices). What's particularly important, however, is not to purchase large quantities. While spices and herbs won't necessarily go bad very quickly, they will lose their flavor over time and so it's better to get smaller quantities and replace them more often rather than have some spice go to waste or simply not taste as good as time goes on. One tip to bring your dried herbs back to life is to warm them in a pan for a minute. When you can smell the herbs, they're good to go.

    If your not plugged into Cooks Illustrated, you should be. They provide a lot of feed back about which spice is better and why. I buy most of mine from Penzeys Spice - they have a very high quality inventory of herbs & spices. I've never been disappointed. Good Luck

    I am a fan of Penzey's Spices. They sell combos of spices and simple pure spices. Freshness seems important to Penzeys and we sure do make tasty foods with their products. They have a few stores but you can buy online or thru their catalog.
