A:When working with phyllo dough, unroll it and take what you need. Cover the rest with wax paper with a damp towel on top. This will keep the phyllo dough from drying out as you work. Scoring the phyllo dough can easily be done with a pizza wheel and using kitchen shears makes cutting easier than using a knife.
