Lentils are a breeze to prepare. Toss them in a pot, cover with water and simmer. Great in a soup, a salad or just as a side dish, they're an inexpensive and delicious way to eat your vegetables. Try them out in Lentil Salad 3 Ways.

Ingredients
Red Lentils (good for soups or a side dish)
- 1 cup uncooked lentils (pick through them for stones and give them a good rinse before cooking)
- salt & pepper to taste
Lentilles du Puy, Green or Black Lentils
- 1 cup uncooked lentils (pick through them for stones and give them a good rinse before cooking)
- salt (optional)
- bay leaf (optional)
How-to
Cook Red Lentils
- In a large saucepan (the lentils will nearly double in volume) place the lentils and cover them with 2" of water. Add a generous pinch of salt
- Bring to a simmer and cook until the lentils are tender, about 15-20 minutes. When they are completely cooked, red lentils will be a soft, orange puree
Cook Lentilles du Puy, Green or Black Lentils
- In a large saucepan (the lentils will nearly double in volume) place the lentils and cover them with 2" of water. Add a generous pinch of salt
- Cover, bring to a simmer and cook until the lentils are tender, about 30-45 minutes
- Drain and serve as a side or in a salad (Lentil Salad 3 Ways)
