Arctic char is a pink-fleshed fish, reminiscent of both salmon and trout. Michael Scelfo of Russell House Tavern uses fresh-water char, which is a great substitute for those who don't like the "fishiness" of salmon. The char gets a simple sear and is served with a well-balanced, hearty salad of bulgur wheat with tarragon-roasted apples and soft, melted leeks.
