Tess Gittleman offers a warm salad with lots of color and texture. Orzo is a great pasta for salads, as it doesn't overwhelm the "fun-fetti" of red, orange and green bell peppers. Feta cheese becomes a sauce once it hits the cooked pasta, and vibrant cherry tomatoes add the finishing touch. With no other cooking besides the pasta, it's a snap to put this together, and it makes plenty to serve as an entrée or side dish.

Posted Monday, October 10, 2011, at 12:07 am by Bella:Great recipe. This also works as a cold salad. I waited for the pasta to cool and then added the feta so it didn't melt. I also added black olives and red onion. Everyone loved it and went back for seconds.
