John Lamkin, chef and owner of Street restaurant in San Francisco, demonstrates his tried and true skills for straightening a knife edge. As he explains, this is not the same as knife sharpening, but something you should do to keep your knives in good working order between sharpenings. You'll see that having a sharpening steel in your kitchen arsenal is a must.

John Lamkin and his wife Lynn Ramsey are the owners of Street restaurant in San Francisco, where Strong Food and Real Drinks rule. From an open kitchen, John offers Pacific Rim, Mediterranean, Pan-Latin, and American classic cuisine. House-made artisan breads, sausages, pates, smoked meats and fish, and desserts round out the menu. Lamkin and Ramsey have developed a network of local farmers, ranchers, cheesemakers and fishermen that provide the components for daily fare. In addition, they can be found gathering ingredients at the many bay area farmers' markets several times a week or picking peaches and tomatoes on a delta farm or apples from a Sierra foothill orchard.
