International » Traditional Sushi Rice
A flavorful dashi broth, seasoned vinegar and Japanese short-grain white rice (also called japonica), combine to make traditional sushi rice. Hiroyuki Konishi of Boston's O Ya restaurant, works quickly and expertly once rice is cooked, using a wooden sushi bowl and paddle to fold in the seasoned vinegar and spread the rice into an even layer. Once cooled to room temperature, it's ready to use for Pom-Pom Sushi or any of your favorite Japanese dishes.
