These Sloppy Joes are so amazing even a carnivore would like them. Our friend Adam Dachis assembles an eggplant, garlic, mushroom and onion "burger" that's covered with a spicy tomato sauce. You can't beat this revamped lunch lady favorite.
Serves 4
Ingredients
Vegetables
- 2-2½ cups white mushrooms, chopped
- 1-1½ cups eggplant, chopped
- ½ cup black beans
- ½ cup yellow onion, chopped
- 1 large garlic clove, minced
- 3 tbsp vegetable oil (black truffle or olive oil is fine too)
Sauce
- ¾ cup ketchup
- 1 tsp mustard seed (or 1 tsp mustard)
- 1 tsp brown sugar
- 3 tbsp BaconSalt
- ⅓ tsp cayenne pepper
- 1 tsp cumin
- ⅛ tsp cinnamon
Extras
- hamburger buns
- sour cream
- shredded cheese
How-to
- Mix ingredients for sauce together
- Heat up oil in skillet on high heat. Pour mushrooms, onions, and garlic into skillet and sauté until onions are translucent
- Add eggplant and sauté until vegetables start to become brown and stick to the pan. Then add black beans and lower heat to medium
- Pour sauce in skillet once beans are heated up and mix. Let simmer for a few minutes, mixing ever once in a while
- Toast rolls (optional) with oil on a pan
- Add vegetable Sloppy Joe to bottom roll, add shredded cheese, and spread sour cream on top roll. Combine and enjoy!
