Dessert & Baked Goods » Tiramisu
Adria Handley of Radici restaurant in Portsmouth, New Hampshire, demonstrates how to assemble this popular Italian dessert. Starting with a sweetened mascarpone (Italian triple-cream cheese) mixture and liqueur and coffee-soaked ladyfingers, alternating layers are built in a springform pan. Dust with powdered sugar and cocoa, and refrigerate overnight to yield a rich, pudding-like cake.

For a kid-friendly Tiramisu, I use decaf coffee, whipping cream (instead of the egg yolks), and when assembling, I dust some cocoa powder in between the layers. The presentation of this recipe seemed somewhat sloppy and the cocoa powder on top looked too thick (that's just my personal taste). When making it in a springform pan, I like to line the outer sides with ladyfingers placed vertical. It makes for a much neater presentation. Other than that, I LOOOOVE Tiramisu!
