Semifreddo may be intimidating to some but Philip Speer shows us that there is really nothing to fear. If you can mix, freeze and puree, you can do this. Start with making a whipped cream, flavored with vanilla. Then incorporate cream cheese, salt, sugar and peanut butter by folding it in to the whipped cream. Put it in the freezer and that's it for the semifreddo. Next, heat raisins, rice wine, sake, water and salt. Let the raisins rehydrate and then puree. Now all you have to do is assemble and enjoy the cold, creamy delight!
