Is it a pancake? Is it an English muffin? The crumpet is the perfect marriage of both. Kelley Geller gives tips on griddling traditional British crumpets complete with idyllic "craggy holes" and spongy texture. Their perfect form may be intimidating, but it is easy to achieve with basic biscuit cutters or ring molds, and a nonstick griddle. Serve these cakes warm with butter and preserves.
