Triathlete Linda Bent shares her quick and easy recipe for a healthy and delicious soup. A creative peanut butter and chickpea broth is added to chicken, tomatoes, spinach and aromatic spices. You might not want to run a marathon after you try it, but you'll know you've just fed your body something really nutritious.

I don't require as much protein, and I don't like large chunks of meat, and so I used 4 oz. of coarsely ground chicken (I grind it myself). I also used my own homemade chicken stock. To add another level of heat, and flavor, I also added a jalapeno, with the stem and ribs removed. What a wonderful taste experience. I intend to make this soup frequently. Thanks for the recipe.
