Chicken with Barberries
Ingredients
- 1 tbsp butter
- 2 cups cooked, shredded chicken breast
- 1 cup barberries (or cranberries), soaked in cold water for at least 10 minutes
- 1 tbsp sugar
- ½ tsp saffron threads
- ½ tsp sugar
- 1 tbsp warm water
- 1 tbsp melted butter
How-to
Soak Barberries & Prepare Saffron Mix
- Soak 1 cup barberries in cold water for at least 10 minutes
- Grind ½ tsp saffron threads and ½ tsp sugar in a spice or coffee grinder until powdered. Mix with 1 tbsp warm water and 1 tbsp melted butter and set aside, covered, to keep warm
Combine & Sauté Ingredients
- Melt 1 tbsp of butter in a skillet over medium heat
- Add 2 cups cooked shredded chicken
- Drain barberries and add to skillet
- Add 1 tbsp sugar and saute ingredients for 5 minutes
- Stir in saffron mixture. Cook an 3 additional minutes
