Chicken with Barberries


Ingredients

  • 1 tbsp butter
  • 2 cups cooked, shredded chicken breast
  • 1 cup barberries (or cranberries), soaked in cold water for at least 10 minutes
  • 1 tbsp sugar
  • ½ tsp saffron threads
  • ½ tsp sugar
  • 1 tbsp warm water
  • 1 tbsp melted butter

How-to

Soak Barberries & Prepare Saffron Mix

  1. Soak 1 cup barberries in cold water for at least 10 minutes
  2. Grind ½ tsp saffron threads and ½ tsp sugar in a spice or coffee grinder until powdered. Mix with 1 tbsp warm water and 1 tbsp melted butter and set aside, covered, to keep warm

Combine & Sauté Ingredients

  1. Melt 1 tbsp of butter in a skillet over medium heat
  2. Add 2 cups cooked shredded chicken
  3. Drain barberries and add to skillet
  4. Add 1 tbsp sugar and saute ingredients for 5 minutes
  5. Stir in saffron mixture. Cook an 3 additional minutes
