Tomatillo-Black Bean Salsa

Makes 3-4 cups

Ingredients

  • 1-2 tbsp olive oil
  • 1 small red onion, minced
  • 1½ lbs (about 12) tomatillos, husks removed, rinsed & chopped
  • 1 jalapeno, seeded & minced
  • 1 tsp sugar
  • 1 (15.5 oz) can black beans, drained & rinsed
  • ¾ cup corn
  • 2 tbsp chopped cilantro
  • 1 clove garlic, minced
  • 2 tsp kosher salt
  • 1 tsp black pepper

How-to

  1. Heat olive oil in a sauté pan over medium-high
  2. Add onions, tomatillos, jalapeño and sugar. Cook until the tomatillos are dull in color and soft, about 8-10 minutes
  3. Add black beans, corn, cilantro, garlic, salt and pepper and cook until heated through, 2-3 minutes
  4. Serve as a warm or cold salsa with tortilla chips, or try it as a sauce for chicken or fish
