Tomatillo-Black Bean Salsa
Makes 3-4 cups
Ingredients
- 1-2 tbsp olive oil
- 1 small red onion, minced
- 1½ lbs (about 12) tomatillos, husks removed, rinsed & chopped
- 1 jalapeno, seeded & minced
- 1 tsp sugar
- 1 (15.5 oz) can black beans, drained & rinsed
- ¾ cup corn
- 2 tbsp chopped cilantro
- 1 clove garlic, minced
- 2 tsp kosher salt
- 1 tsp black pepper
How-to
- Heat olive oil in a sauté pan over medium-high
- Add onions, tomatillos, jalapeño and sugar. Cook until the tomatillos are dull in color and soft, about 8-10 minutes
- Add black beans, corn, cilantro, garlic, salt and pepper and cook until heated through, 2-3 minutes
- Serve as a warm or cold salsa with tortilla chips, or try it as a sauce for chicken or fish
