Butternut Squash Bisque

Serves 4-6

Ingredients

For Bisque

  • 3 lbs butternut squash, peeled, seeded & diced
  • salted water to cover squash
  • 3-4 cups low-fat milk
  • 1 tsp brown sugar
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp cinnamon
  • ½ tsp salt
  • ¼ tsp white pepper
  • ¼ - ½ cup chicken stock
  • 1 tsp butter or margarine

Suggested Garnishes

  • sour cream
  • chopped chives

How-to

  1. In a large pot, add water, squash and salt, and bring to a boil. Cook until squash is very soft, about 20 minutes
  2. Drain well and mash thoroughly
  3. Gradually add in the milk, whisking until smooth
  4. Add the brown sugar, garlic powder, onion powder, cinnamon, salt, pepper and butter or margarine
  5. Add the chicken stock until desired consistency is reached, continue whisking until smooth
  6. Transfer back to pot and re-warm to a simmer over medium heat
  7. Garnish with chives and sour cream if desires, and serve immediately
