Butternut Squash Bisque
Serves 4-6
Ingredients
For Bisque
- 3 lbs butternut squash, peeled, seeded & diced
- salted water to cover squash
- 3-4 cups low-fat milk
- 1 tsp brown sugar
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp cinnamon
- ½ tsp salt
- ¼ tsp white pepper
- ¼ - ½ cup chicken stock
- 1 tsp butter or margarine
Suggested Garnishes
- sour cream
- chopped chives
How-to
- In a large pot, add water, squash and salt, and bring to a boil. Cook until squash is very soft, about 20 minutes
- Drain well and mash thoroughly
- Gradually add in the milk, whisking until smooth
- Add the brown sugar, garlic powder, onion powder, cinnamon, salt, pepper and butter or margarine
- Add the chicken stock until desired consistency is reached, continue whisking until smooth
- Transfer back to pot and re-warm to a simmer over medium heat
- Garnish with chives and sour cream if desires, and serve immediately
