Tomato-Ginger Relish w/ Mint, Cilantro & Basil
Ingredients
- 3 large tomatoes, peeled, seeded & diced
- juice of 1 lime
- 2 tbsp ginger, peeled & finely chopped
- 1-2 tbsp red onion, chopped
- 1 tbsp ponzu
- ¼ cup cilantro, gently chopped
- ¼ cup basil, gently chopped
- ¼ cup mint, gently chopped
- salt & white pepper for seasoning
How-to
- Peel, seed and chop tomatoes and place in large bowl
- With the back of a spoon, peel & finely chop ginger
- Add lime juice, red onion and ponzu
- Fold in fresh herbs, season with salt and white pepper
- For the best flavor, allow relish to sit overnight in the refrigerator
- Serve over fish, meat or Chef Paul's Curry-Rubbed Skirt Steak
