Tater Tots

Makes 3 dozen&nbsp

Ingredients

  • 10 potatoes, peeled & diced
  • 8 cups water, divided
  • 1 lb butter
  • 4 cups flour
  • 4 whole eggs + 4 egg yolks
  • 1 tbsp salt
  • 1 cup potato flakes (if needed as binding agent)

How-to

  1. Boil potatoes in 4 cups of water until cooked through, then drain 
  2. In a separate pot, boil butter and 4 cups of water until butter melts
  3. When butter has melted, slowly whisk in 4 cups of flour over low heat
  4. Add butter and flour mixture to the cooked potatoes and mix in a stand mixer on speed #1 for 5 minutes
  5. Add 4 whole eggs and 4 egg yolks
  6. Mix for 5 minutes at speed #2
  7. Add 1 tbsp of salt and mix for 5 minutes at speed #1
  8. Add potato flakes if needed for binder
  9. Portion tots to appropriate size, roll in potato flakes and fry in vegetable oil at  350º  for 1-2 minutes or until golden brown
