Tater Tots
Makes 3 dozen 
Ingredients
- 10 potatoes, peeled & diced
- 8 cups water, divided
- 1 lb butter
- 4 cups flour
- 4 whole eggs + 4 egg yolks
- 1 tbsp salt
- 1 cup potato flakes (if needed as binding agent)
How-to
- Boil potatoes in 4 cups of water until cooked through, then drain
- In a separate pot, boil butter and 4 cups of water until butter melts
- When butter has melted, slowly whisk in 4 cups of flour over low heat
- Add butter and flour mixture to the cooked potatoes and mix in a stand mixer on speed #1 for 5 minutes
- Add 4 whole eggs and 4 egg yolks
- Mix for 5 minutes at speed #2
- Add 1 tbsp of salt and mix for 5 minutes at speed #1
- Add potato flakes if needed for binder
- Portion tots to appropriate size, roll in potato flakes and fry in vegetable oil at 350º for 1-2 minutes or until golden brown
