Sweet Potato Hash
Serves 2-4
Ingredients
- 1 tbsp olive oil
- 1 large onion, thinly sliced
- pinch of salt
- pinch of black pepper
- 3 sweet potatoes, peeled & diced (about 1")
- ½ cup pure maple syrup
- 2 tbsp Madras curry powder
- 4 tbsp cold unsalted butter

- chopped fresh herbs
How-to
- Heat olive oil In a large sauté pan over low heat, and add sliced onions. Season with salt and pepper. Stir once, then leave alone to caramelize for about 20 minutes without touching
- Meanwhile, blanch diced sweet potatoes in boiling water for 3½ minutes. Remove and set aside
- Add the curry powder and maple syrup to the onions and reduce by ¼, about 2 minutes
- Add cold butter and allow to melt. Fold in sweet potatoes, season as desired, and cook an 1-2 additional minutes over medium-high heat
- Garnish with fresh chopped herbs if desired and serve
