Slow Cooker Baked Beans
Ingredients
- 1 lb dry pea beans, rinsed clean
- ¾ cup water
- ¼ cup dark brown sugar
- ½ tsp mustard powder
- pinch of ginger
- ½ cup molasses
- ¼ lb salt pork, sliced or chopped
- 1 large onion, quartered

How-to
- Check dry beans carefully to be sure there aren't any stones. Then wash beans, drain water, and and place in a saucepan
- Cover completely with fresh water and boil until soft, about 1 hour, uncovered
- Drain water and place beans a slow cooker/crock-pot
- In a large measuring cup (or any container with a spout for ease of pouring) mix together ¾ cup water, the brown sugar, molasses, ginger and mustard powder and pour this mixture over the beans. Mix gently
- Place salt pork and onions on top of the beans
- Cover and start the crock pot on high and cook until things start to bubble
- Turn to low and cook overnight, stirring occasionally
- Serve and enjoy!
