Simple Pot O' Beans
Serves 6
Ingredients
- 1 carrot, peeled & diced
- 2 stalks celery, diced
- 2 cloves garlic, smashed & peeled
- ½ onion, diced
- 2 tbsp olive oil
- 1 lb dried beans, rinsed
- water to cover 2" above beans + extra if needed
- 1 tbsp salt
How-to
- In a medium sauce pan, heat olive oil over medium-high heat
- Add carrot, celery, garlic and onion. Sauté vegetables 5-10 minutes, until softened
- Add beans and water. Cover and bring to a boil for 10 minutes
- Reduce to a simmer, cover but leaving the lid off just a bit to release steam. (You can also place a large spoon or fork across the top of the pot, then place the lid on, to keep open)
- Allow to simmer on low 1½ - 3 hours, until the "pot liqueur" is at an even level with the beans, and the beans are tender. If the water evaporates too quickly, add more water to cover 1" above the beans for the remainder of the cooking time
- When the beans are almost finished, add salt to taste
