Sautéed Kale w/ Apples
Serves 3
Ingredients
- 1–2 tbsp olive oil
- 1 onion, thinly sliced
- 1 large, tart apple, sliced
- 3 garlic cloves, minced
- ¼ cup raisins
- 1½ bunches kale, thinly siced
- ¾ cup water
- 1½ tbsp balsamic vinegar
- ½ tsp smoked paprika
- ½ cup toasted walnuts, chopped
- salt
- 2–3 tablespoons crumbled feta
How-to
- Heat the olive oil in a wide, heavy-bottomed saucepan over medium-high
- Add the onions, reduce heat to medium and cook 10 minutes
- Reduce the heat to low and add the sliced apple
- Add the garlic, raisins, kale and water. Cook for 5-10 minutes or until kale is tender, stirring frequently
- Add the vinegar and cook until it has evaporated
- Add the walnuts (to toast, bake in a 350º oven for 7-8 minutes until golden), feta and smoked paprika, stirring well. Season with salt to taste
