Grilled Panzanella
Ingredients
- 1 French baguette (or other crusty bread)
- 1 lb Roma tomatoes, chopped
- 2 English cucumbers, chopped
- ½ red onion, sliced thin
- ½ cup fresh basil, sliced thin (chiffonade)
- balsamic vinegar
- extra virgin olive oil
- salt & pepper to taste
How-to
- Heat your grill to medium-low
- Cut bread into large slices. Brush with olive oil and sprinkle with salt and pepper. Grill cut side down for 1-2 minutes until well toasted. Take bread off grill and set aside to cool
- Cut grilled bread into big chunks
- Place in large salad bowl with other ingredients. Toss with balsamic and olive oil, season with salt and pepper and enjoy!
