Latin Grilled Mahi Mahi & Avocado w/ Pineapple Salsa
Serves 4
Ingredients
- 12 littleneck clams
- 4 8-oz mahi mahi fillets
- 2 avocados, cut in half, pits removed, leave skin on
- olive oil to prep fish for grill
Spice Mix
- 1 tsp cumin
- 1 tsp ground coriander
- 1 tsp chile powder
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp olive oil
Pineapple Salsa - Combine all ingredients & let sit 1 hour before serving
- 1 cup fresh pineapple, small dice
- ½ red pepper, small dice
- ½ green pepper, small dice
- ½ small red onion, small dice
- ½ cup fresh chopped cilantro
- ⅓ cup fresh lime juice
- 10 shots Tabasco (optional)
- 1 tsp salt
- 1 tsp pepper
How-to
Grill Fish & Avocados
- Start grill. Rub mahi mahi with oil & spice mixture and over medium hot grill cook fish 5-6 minutes per side until done
- Sprinkle spice mix on avocados and grill face down for 4 minutes until golden brown
- Serve mahi mahi with half an avocado and a scoop of salsa
