Grilled Shrimp & Asparagus w/ Roasted Red Peppers
Ingredients
- 3 shrimp, cleaned, de-veined & tails removed
- sea salt to taste while grilling
- olive oil for drizzling while grilling
- whole basil leaves
Marinade
- drizzle of olive oil
- red pepper flakes to taste
- sea salt to taste
Asparagus
- 8 asparagus spears, white & green
- olive oil for drizzling while grilling
- sea salt to taste while grilling
How-to
Marinate the Shrimp
- In a bowl, add shrimp, drizzle with olive oil, add sea salt and red pepper flakes to taste
- Allow shrimp to marinate for a few minutes
Grill the Asparagus
- Trim and peel about 2" from the ends of the asparagus
- Heat grill on high and lay asparagus right on the hot grill. Drizzle with olive oil
- Turn asparagus while grilling to get a nice char and season with salt and drizzle again with olive oil while grilling to get flavor on all sides
- Asparagus are done when they are tender and bend easily
Grill the Shrimp
- When the asparagus are almost done, remove shrimp from marinade and place on the hot grill
- Close the grill cover for 1-2 minutes (this creates a type of oven to cook both the inside and outside of the shrimp)
- Season with salt to taste and a drizzle of olive oil. Flip shrimp over and place a whole basil leaf on each shrimp. Drizzle again with olive oil
- Close the grill lid and cook for 30 seconds more
Plate & Serve
- Lay asparagus spears on a plate, alternating white and green
- Place shrimp to the side of the asparagus
- Pile on some Fire-Roasted Red Peppers with Garlic & Basil and serve!
