Strawberry Gazpacho
Ingredients
- 3 qts fresh strawberries, hulled
- 1½ cups orange juice
- ¼ cup lime juice
- 2 tbsp rice vinegar
- 1 cup water
- 2 tsp kosher salt
- 1 tsp ground black pepper
- 3 tbsp honey
- ¼ cup extra virgin olive oil
- Tabasco sauce to taste
Garnish (add as much or as little as you like)
- diced strawberries
- diced cucumber
- diced red onion
- toasted almonds
- fresh chopped cilantro
- olive oil
- ground black pepper

How-to
- Add strawberries, orange juice, lime juice, rice vinegar, water, salt, pepper, olive oil and Tabasco sauce to a pot. Using an immersion blender, purée to a creamy texture
- Ladle into a bowl (or, as Chef Peter demonstrates, into cute take-out boxes), spoon garnish choices in the center and serve
