BBQ Chicken w/ Caribbean Green Seasoning
Serves 8
Ingredients
- 3½ lbs chicken, bone in & skin-on, cut into pieces
- 2 tbsp green seasoning*
- paprika
- 1 cup BBQ sauce*
Green Seasoning
- 1 bunch scallions
- 1 bunch thyme
- 1 bunch cilantro
- 11 cloves garlic
- 1 habañero pepper
- 1 tbsp peeled fresh ginger
- 1 lime or lemon, skin-on, diced, seeds removed
- 1 cup water
Caribbean BBQ Sauce
- 1½ cups ketchup
- ½ cup sriracha chili sauce
- ½ cup tomato paste
- ¼ cup red onion, grated
- 1 tsp brown sugar
- 1 tsp yellow mustard
- 1 tsp salt
- ⅓ cup beer
- ½ tsp habañero pepper, chopped
- 1½ cups water

How-to
Make Green Seasoning
- Combine all ingredients in a blender. Blend until mix is a smooth thick paste
Make BBQ Sauce
- Whisk all Caribbean BBQ Sauce ingredients together in a large bowl and set aside
Add Green Seasoning & Bake Chicken
- Preheat oven to 325º
- Wash chicken and make a few shallow scores (knife slits) in the skin and fat
- Rub chicken thoroughly with the green seasoning. Place in a baking dish and sprinkle with paprika. Bake for 50 minutes
Add Sauce & Grill Chicken
- Remove from oven and coat with BBQ sauce
- Grill 1-2 minutes per side on medium-high heat. If you do not have access to a grill, place under oven broiler for 1 minute each side
