Sweet & Savory Chicken
Ingredients
- 1½ lbs boneless chicken breast, cut into pieces
- salt
- pepper
- 1 tbsp olive oil
- ¼ cup white onions, chopped
- ¼ cup pimento-stuffed olives, halved
- ¼ cup prunes, chopped
- 2 tbsp capers, drained
- ¾ cup chicken broth
- 1 box of instant couscous, cooked per package directions (optional)
How-to
- Take chicken and place between two pieces of plastic wrap and flatten out with a mallet. Sprinkle each side with salt and pepper
- In a large skillet heat olive oil over medium heat. Cook chicken about 5 minutes on each side, browning just a little. Transfer to plate, cover with foil to keep warm
- To the chicken drippings and oil left in the pan, add onion and cook until softened, stirring occasionally. Add olives, prunes and capers with ¾ cups of chicken broth
- Bring to a boil, then simmer for 2 minutes. Add chicken back to pan and simmer for 5 minutes
- Serve with couscous or brown rice
