Latkes
Makes 10-12
Ingredients
- 2 large baking potatoes
- 2 medium onions
- 1 egg, lightly beaten
- salt to taste
- pepper to taste
- Matzo meal (as needed if mixture is too wet)
- olive oil for frying
How-to
- Add potatoes to a food processor with shoestring blade attached and pulse
- Add onions and continue to pulse
- Transfer the onions and potatoes to a large bowl and add 1 slightly beaten egg
- Add salt and pepper to taste
- Add Matzo meal as needed if mixture is too wet
- Combine all ingredients well
- Fry in olive oil over medium heat 3-5 minutes each side until golden and crispy
- Plate and serve with apple sauce, sour cream, or just as they are
