Curried Goat Stew
Serves 4
Ingredients
- 6 tbsp vegetable oil, divided
- 2 lbs fresh or frozen (thawed) goat meat, cut into 1" cubes
- 2 onions, diced
- 3 garlic cloves, minced
- 2 tsp sweet curry powder
- 2 tsp hot curry powder
- 2 bay leaves
- 1 tbsp fresh thyme leaves
- ΒΌ cup coconut milk
- 2 cups beef stock
- 1 tbsp white wine vinegar
- salt & pepper for seasoning
How-to
- Season goat with salt and pepper
- Heat 3 tbsp of oil in a large pot
- Sear goat in batches until nicely browned
- Remove goat and set aside. In same pot as you seared the goat, add remaining oil and onions. Sauté onions for 10-15 minutes
- Stir in garlic and curry powders. Cook for 2-3 minutes
- Return goat to the pot and add bay leaves, thyme, stock, coconut milk and vinegar. Season with salt and pepper
- Simmer for 60 minutes, or until goat is tender
- Serve atop cooked rice
