Chicken & Rice
Serves 4
Ingredients
- 3 chicken drumsticks & 4 small thighs (or all drumsticks & all thighs, whichever you prefer)
- ½ cup olive oil
- 1 medium onion, chopped
- 1 large garlic clove, minced
- 3¼ cups water
- 1½ cups rice
- 1 bay leaf
- 2 tsp salt
- ¼ tsp freshly ground black pepper
How-to
- Heat olive oil on medium heat just until it begins to smoke
- Cook chicken for about 5 minutes on each side (just until browned). Careful of oil splattering. Use a splatter guard if you have one
- Remove chicken from pan temporarily
- Saute onions and garlic until translucent or slightly brown
- Put chicken back in pan and add salt, pepper, rice, water and bay leaf
- Cover and simmer for 20-25 minutes. Rice and chicken should be tender
