Beef Rollatini
Ingredients
- 2 lb flank steak, pounded
- butter, enough to spread on slices of flank steak
- ½ cup Italian style bread crumbs
- 1 cup grated Parmesan cheese
- salt & pepper to taste
- ¼" olive oil
How-to
Prep Steak
- Place steak between two pieces of parchment paper and pound with mallet until thin
- Sprinkle with salt & paper and slice pounded steak into 1½" wide strips
- Generously coat steak strips with room temperature butter
Roll, Fry & Serve
- In a bowl mix Italian style breadcrumbs with Parmesan cheese
- Spoon breadcrumb-cheese mixture onto steak
- Roll strips and secure with toothpick
- Coat bottom of frying pan with ¼" olive oil and heat
- Place rolls in frying pan and cook for 5-8 minutes or until meat is cooked
